Sweet and sour chicken appetizers
Cut up one green pepper into large chunks
1 can of pineapple tidbits drained (reserve juice)
1cup brown sugar
1cup red wine vinegar
Juice from one can of pineapple tidbits (reserve pineapple :)
2tbl. soy sauce (kikkomans)
2 cloves garlic minced
1/2tsp. ground ginger
In a saucepan combine sugar and cornstarch, add all other ingredients.cook on low heat, stirring constantly, until thick and bubbly. remove from heat.
cut up 3-4 chicken breast into bite size chunks.
in a bowl mix together:
3tblspoons chicken base or bullion, dissolved in1/4cup water
Mix well then add the chicken. fry until golden brown, drain on paper towel
To make appetizers:
To a toothpick, add 1 piece of pineapple, 1 piece of bell pepper, and one chunk of chicken, place in a lasagna dish, after all the appetizers are prepared, spoon sauce over all the appetizers and bake at 375* until bubbly, about 15 minutes. serve hot or cold.
