English Toffee Cookies

English Toffee Cookies. They really taste like English toffee.

Ingredients:
2cups flour
1tsp. salt
1cup sugar
1cup real butter
1 beaten egg
1tsp. vanilla
12oz. milk chocolate chips
2oz. finely chopped pecans

Preparation:
Heat oven to 350*
Lightly greased cookie sheet
In a bowl whisk flour and salt to blend. Set aside.
In another bowl, beat butter and sugar until fluffy. Add egg and vanilla beat.
Stir the flour mixture into the butter mixture.
Spread the dough onto the cookie sheet. about 1/8 inch thick.
Bake for 10 minutes until golden brown.
Remove from oven and sprinkle the chocolate over the dough.
Wait a few minutes for them to melt and spread them evenly to glaze.
Sprinkle with nuts and cool. Cut into bars.

This dough is pretty soft. It's easier to just spread/press it onto a greased cookie sheet. Bake until the edges just begin to brown.

Sprinkle on the chocolate chips and let it sit a few minutes.

Using a rubber spatula, spread the chocolate evenly-all the way to the edges.

Sprinkle the pecans, cool and cut. I used a pizza cutter this time-worked pretty well.

  1. What a brilliant recipe, no rolling pin to wash, no work surface covered in flour to clean. I can't wait to try this. Thanks
