Garlic Ginger Basil Salmon

Ingredients:
2 center-cut salmon fillet

Oil for frying (very small amount)
salt to taste
1 tbsp minced fresh ginger
2 cloves crushed garlic
1/4 cup rice vinegar
2 tbsp brown sugar
hot chili sauce to taste (I used 1/2 tsp)
1 tsp soy sauce
1/4 cup water
2 tbsp chopped basil


Instructions:
In a bowl add ginger, garlic, brown sugar, rice vinegar, soy sauce, hot sauce,and water, mix.
Salt the salmon on both sides.
Heat a skillet, add oil, heat, add salmon, skin side down.
Fry the salmon about 4 minutes on each side, until it looks crispy and cooked through and no longer opaque in the center.
Add the sauce followed by the basil, cook to reduce the liquid.
It will become a thick syrupy sauce, spoon the sauce over the salmon to coat.
Remove from skillet and serve.
