Crème de Menthe Cake

                                        Crème de Menthe Cake
                This is so light and refreshing good on a hot summer day.


Ingredients:
1 white cake mix
1-1/4cups water
1/2cup vegetable oil
1-/2tsps peppermint extract
3egg whites

TOPPING
1 jar hot fudge sauce- or-Homemade hot fudge sauce
1-8oz contain frozen whipped topping-thawed
A few drops of green food coloing
1/2 teaspoon peppermint extract
A few Crème de Menthe candies for decoration-if desired

Heat oven to 350*
Spray the bottom of a 13x9 cake pan with cooking spray.
Make cake mix according to box directions using the oil, water,eggs and 1-1/2 teaspoons of the mint extract.You can add about 10 drops of food coloring to the cake batter if you like.
(Or marbled, as I did in the photo; remove 1/3of the batter, blend in the food coloring, pour the white batter into the baking pan. Drizzle the green batter over it. Crisscross through the batter a few times)
Bake for about 30 minutes. cool.
Warm the hot fudge sauce slightly and pour/spread over cool cake. it will only be a very thin layer, but it's enough. I tried doubling it once, way too chocolatey. 
Add the 1/2 tsp of peppermint extract and a few drops of green food coloring to the thawed whipped topping,and spread over the cooled hot fudge. chill cake. decorate with candies before serving.
