Chicken Fettuccine Alfredo

                                       Chicken Fettuccine Alfredo


This makes enough for a large family. I have made this using whole chicken breasts or slices. It prepares the same way, only taking a little longer to cook the chicken.

Ingredients:
2 tablespoons oil
1 package frozen boneless chicken breast (cut up into small pieces)
2 tablespoons chopped garlic
1 small onion diced

For the sauce:
1 can evaporated milk
a 1-1/2 inch slab of boxed processed cheese, cut up ( such as velveeta, but I think the generic brands are better)
1/4 cup Parmesan cheese
1/2 teaspoon garlic powder
You'll also need:
2-12oz packages cooked fettuccine ( drained just prior to adding the sauce)

Preparation:
Heat a skillet on high, add the oil , garlic and onion, stir for a few seconds then add chicken.
Basically you are trying to brown the chicken somewhat as it is grilling. lower the flame and continue to cook until all the juices from the chicken have evaporated.
Add all the sauce ingredients, and stir until the cheese has melted, and sauce thickens.( you may have to add a little water if the sauce is too thick) Add to the cooked fettuccine, and serve.

                   Add the chicken to the garlic and onion. Grill until browned.

 Then add all other sauce ingredients. Once the cheese has melted the sauce will thicken very quickly.
