Salmon
Salt
Pepper
Oil
Balsamic vinegar
Mango juice-I guess you could use another juice if you cant find it.
Feta Cheese (The recipe calls for sliced, but I used crumbled feta)

Here is how I made this recipes for two pieces of salmon:

In a saucepan add about 1/2 cup balsamic vinegar and 1 cup mango juice.heat to reduce into a thick syrupy sauce.set aside.
Heat oven to 375*
Salt and pepper the salmon, meanwhile heat a skillet. (You want it to be very hot before adding oil.)
Add oil and allow it to become very hot. Add the salmon, skin side up.Salt salmon again.
Allow the salmon to cook on that side for a few minutes until it looks browned and crispy.
Turn, add feta to the top of the salmon, and place in the oven for a few more minutes, or until salmon is no longer opaque.
Turn the oven to broil and cook until the Feta cheese becomes brown, (a minute or two)
Place on a serving dish and drizzle with the balsamic glaze.
