Strawberries and Cream - Oatmeal


I really like the, almost over-ripe, taste of frozen sliced strawberries. But a few crushed, fresh strawberries are almost as good, in this. 2 Servings.

1cup old fashioned oats
1-3/4cups water
3-4Tbl. frozen sliced strawberries and juices- thawed
1/8tsp. salt
1Tbl. butter
1-2Tbl. sugar
milk
Add everything except the milk to a pan. Cook, stirring occasionally, 5 minutes. Stir in the milk, to taste.

Bananas and Cream - Oatmeal

Bananas and Cream - Oatmeal with French toast.
Even kids who don't like oatmeal, love this. It tastes like warm banana pudding, except healthier. You can make it for breakfast or dessert. The kids usually add a spoon more, of sugar.

1cup old fashioned oats

2 mashed bananas
1/8tsp. salt
1Tbl. butter
2Tbl. sugar
milk
Add everything except the milk to a pan. Cook, stirring occasionally, 5 minutes. Stir in the milk, to taste.

Mom's Buttermilk Pancakes

                                       Mom's Buttermilk Pancakes

I was planning on posting this along with a blueberry syrup recipe, but I forgot to add the blueberries to my shopping list. I guess I'll save that for another day. My favorite way to eat pancakes is with a little butter and homemade strawberry preserves.
If you want to make blueberry pancakes, drop a few frozen or fresh berries on the pancake, immediately after you pour it into the skillet.
This makes 12

Ingredients:
2cups flour
2Tbl. sugar
1Tbl baking powder
1/2tsp. baking soda
1/2tsp. salt
2cups buttermilk- (or add 2tsp. vinegar to a measuring cup, fill to the 2cup mark with milk. Let stand 15 minutes=Buttermilk)
2 eggs
2Tbl. melted butter
1tsp. vanilla

Preparation:
In a large bowl whisk together the flour, sugar, baking powder, baking soda and salt.
In a smaller bowl, whisk together the buttermilk, eggs, butter and vanilla.
Pour the buttermilk mixture into the flour mixture, and stir just enough to moisten.
It should be lumpy, too much stirring makes them tough and rubbery.
I use a small nonstick skillet, and cook one at a time.
Heat a tsp. of oil in a skillet or griddle, on a medium/low flame.
Using a soup ladle, pour the batter into the pan and shake the pan once, (otherwise the center will be puffier than the edges) 
When the pancake seems to be getting dry around the edges, flip and brown the other side.
Since I usually have to make a mountain of these, I butter them as soon as I pull them out of the pan.
Serve with your favorite topping.

Like a lot of Americans, I'm not a breakfast type person. Just beans for me... coffee beans that is.
A shower and a  strong cup or two of Colombian roast, then off to work.
I do like breakfast for dinner occasionally. This is one of those dishes, that incites nostalgia for me.
I always think of Mom.

Ingredients:
4oz dried beef- chopped ( I also use Buddig beef )
3Tbl. butter or oil
1tsp. salt
1/2tsp. pepper
1/4cup flour
1can evaporated milk
2cups water

Preparation:
Melt the butter, on medium heat, in a 2quart pan. Add salt, pepper and beef.
Fry the beef for about 2 minutes, then add the flour.
Cook another minute, whisking constantly.
Add the milk and water.
Whisk, scraping the bottom, until it comes nearly to a boil.
If it's too thick, add a little water.
If too thin, cook a bit longer, (it will thicken as it cools too)
Serve on toast points.

Breakfast Horseshoe For Dinner

                                  Breakfast Horseshoe.One ugly mess.


Aaron made me do it. He whined and cried until I made breakfast horseshoes for dinner.
Yep, it's all here Eggs, Bacon, Sausage, Cheese, potatoes, gravy-plus- a biscuit to lighten it up a bit.
Move over Paula Deen....way over, dear.... there's a new fat lady in town.
I think I'll have a couple of biscuits and call it quits on this one. Too rich for me.
All kidding aside. I've taken pride in the fact that my family has extremely low cholesterol, normal blood pressure, blood sugar. Even though I post these kinds of recipes, we only have this kind of meal occasionally. Lots of veggies, that's the key to good health, but you don't need me to tell you that.


Ingredients:
biscuits or toast
1 recipe Sausage Gravy
1 recipe Bacon Egg And Cheese Scramble
1 recipe Breakfast Baked Potatoes

                                       How to build a Breakfast Horseshoe


                          First split a biscuit. If you're wise you'll stop there.

Add Bacon Egg And Cheese Scramble. I can feel your anticipation mounting.


                                    Next Breakfast baked potatoes.


Top every thing with sausage gravy and get comfortable...You'll need a nap after this one.

Sausage Gravy


                         Sausage Gravy for Biscuits or Breakfast Horseshoes
 

Ingredients:
1lb.  mild breakfast sausage- I use Bob Evans country mild
2tbl oil (omit this if you are using a sausage with a lot of fat)
1 can evaporated milk
6tbl. flour
3cups water

Preparation:
Brown sausage in a skillet. Don't drain meat drippings, you'll need it for the roux.
Add the flour and whisk for about 1 minute.
Add the milk and water and whisk until smooth .
Cook and stir (scraping the bottom) until the gravy just begins to boil.
The gravy will thicken as it cools. Add more water if needed.

Bacon Egg and Cheese Scramble

                                    Bacon Egg and Cheese Scramble

Ingredients:
1 lb. bacon cut into lardons   What-Are-Lardons Video
1 Dozen Eggs-beaten
4-5 Slices American cheese- (or your favorite cheese)

Preparation:
Spray a large skillet with non-stick cooking spray. Heat.
Add bacon and fry until crispy.
Drain most of the bacon drippings from the pan.
Add eggs and cook until eggs are set.
Top with cheese, Turn off stove.
Wait 1 minute and stir the melted cheese into the eggs. Serve.

Superb French Toast

Superb French Toast

Ingredients:
Oil or Butter
2 Eggs
4tbl Milk or Cream
1tsp. Vanilla
Cinnamon
6 slices White bread or sliced French bread

Preparation:
In a bowl, add eggs and vanilla.Whisk until blended.
Add a small amount of oil to a griddle or skillet. Heat to medium.
Dip bread into milk mixture, allowing excess to drip off.
Place on warm griddle, and sprinkle a little cinnamon on each slice.
Lightly brown each side. Remove from heat.
Serve with maple syrup or top with strawberries and whipped cream.



Breakfast Baked Potatoes

                                         Breakfast Baked Potatoes
                       These go great with omelets-similar to hash browns


Ingredients:
1 Gallon storage bag
4-5 Russet potatoes- diced large
2tbl Vegetable oil
1 Onion diced
1 tsp. Salt
1/4tsp Pepper

Preparation:
Heat oven to 375*
In the storage bag, add oil , onions and herbs. Shake to mix.
Add potatoes, seal bag and shake to coat.
Pour contents onto a cookie sheet.
Bake for 30 minutes, or until potatoes are tender and golden brown.
