Eclair Pie

                                                          Eclair Pie

Whomever created this dish, Thank You! This is one of my favorites.
I discovered it, only a few years ago, when a co-worker brought it to a potluck.
I had never heard of it then, but I see the same recipe all over the internet now. Just in case you missed it, here it is again.


Ingredients:
2 boxes of instant vanilla pudding
3cups milk
1-8oz. container cool whip-thawed
1 can of chocolate frosting
1 box graham crackers


Preparation:
Whisk together the milk and pudding, and refrigerate about 30 minutes to set.
Fold in the cool whip.
Place a layer of graham crackers in the bottom of a baking dish, I use a lasagna pan.
Spread half of the pudding over the crackers
Place another layer of crackers.
Spread on the rest of the pudding.
Top with another layer of crackers.
Warm the frosting just a bit, in the microwave, to make it easier to spread.
Spread it onto the top layer of crackers.
I don't use the entire container of frosting, but the recipe does call for it.
Refrigerate overnight, to allow the crackers to soften.

DAAAY-O!


    DAAAY-O! - OK  not so pretty, but it really makes up for it in taste. It was supposed to have a layered look but... the best laid plans of mice and grandmas.



My grandkids love The Banana Boat Song. I get a real kick out of watching them sing and dance to it. During a sleepover at grandma's, I was making them a tropical dinner. So I decided to create a tropical dessert  just for them.

Ingredients:
1-3oz. box vanilla -cook and serve pudding
1-3oz box lemon- cook and serve pudding
1-3oz. box banana cream -cook and serve pudding
1-3.4oz. box coconut cream- instant pudding
4 bananas
1 can crushed pineapple- drained
2Tbl. yogurt
1 box graham crackers
 6 cups of milk for the puddings

Preparation:
Place a layer of graham crackers in the bottom of a baking dish. (like a lasagna pan)
Slice one banana and arrange them on the crackers.
Cook vanilla pudding according to box directions, and pour the warm pudding over the bananas.
Add another layer of crackers and banana.
Don't make the lemon pudding according to the box. Instead only use the 2 cups of milk.
Pour over the bananas.
Place another layer of crackers and banana.
Cook the banana pudding according to box directions, pour over bananas.
Allow to cool completely.
After it has cooled Add a layer of bananas.
In a bowl, add instant coconut pudding, drained pineapple and yogurt.
Mix well and spread over cooled desert.
Refrigerated overnight to soften the graham crackers.

Instant Choclate Mousse

                The kids liked this frozen, they said it tastes like fudge bars.
                      I have also filled cream puffs and cakes with this.
Ingredients:

2 envelopes instant chocolate pudding
1-8oz. container frozen whipped topping -thawed

Preparation:
Mix the pudding according to box directions and refrigerate for 30 minutes.
Fold in the whipped topping until well blended. serve as is, or garnish with chocolate shavings.

Lemon Curd

Lemon Curd
You could leave out the lemon juice and peel and add 1/4cup fruit such as strawberries.

Ingredients:
2eggs
1cup sugar
6tbl. melted butter
1/4cup fresh lemon juice
2tbl. grated lemon peel

Preparation:
In the top of a double boiler, whisk eggs and sugar.
Stir in butter, lemon juice and peel.
Stirring constantly, cook until mixture thickens to a pudding-like texture. cover and chill.

Instant Bavarian Cream

                                        Instant Bavarian Cream
This is not the real thing, but a lot more stable and a pretty good imitation.
Great for filling cream puffs. Lots of possibilities.
You could leave out the milk and add 1/2cup fruit such as strawberries, or use lemon pudding instead.


Ingredients:
8 ounces cream cheese, softened
2- 3 1/2 ounce packages instant vanilla pudding mix
3/4 cup milk
12 ounces frozen whipped topping- thawed

Preparation:
Mix together cream cheese and dry pudding mix. Beat in milk. Fold in whipped topping.

White Chocolate Mousse With Berries

                              White Chocolate Mousse with Mixed Berries
                         I think this would be great served in individual pastries.

Ingredients:
1cup whipping cream
2tbl.sugar
3oz. cream cheese-softened
3-1oz.squares baking white chocolate
2 cups mixed fresh berries-blueberries,strawberries, raspberries

Preparation:
Beat cream until it forms soft peaks.
Add sugar, again, beat to form soft peaks.Set aside.
Melt chocolate.
Beat cream cheese until fluffy. Add the chocolate, beat well.
Gently fold in the Whipped cream.
Layer in parfait cups.

                                      Beat the cream until soft peaks form.


                             Add the sugar and beat until stiff peaks form.

                    Melt the white chocolate in a microwave or double boiler.


        Beat the cream cheese. Add the melted chocolate and beat until blended.

Fold n the whipped cream. Beat on the lowest setting just until blended. Then layer in serving dishes.






Bread Pudding With Caramel Sauce

Bread Pudding With Caramel Sauce
Another old recipe no one makes anymore.
So good, like a custard.Very easy

Ingredients for the pudding:
4 cups stale bread or toast it in the oven until very dry
2tbl. melted butter
1/2cup sugar
3cups warm milk
3eggs
1tbl. cinnamon
1tsp.nutmeg

Preparation:
Heat oven to350*
Butter a 1/2 quart baking pan
Place bread in a large bowl.
In another bowl, whisk together all other ingredients.
Pour over bread. let it stand 5 minutes.
Spread the bread mixture into the baking dish.
Add about 1 inch of water to a larger baking pan.
Place the pan of water in the oven.
Place the bread pan inside the water pan.
bake for1 hour or until custard is set, no longer runny.
Serve warm with-

Warm Caramel Sauce:
1cup sugar
1/2cup boiling water
2tbl. cream
Pinch of salt
Preparation:
Place sugar in a skillet and heat on a very low flame.
Stirring constantly until sugar begins to liquify and turn a golden-honey color.
Quickly remove from heat. Add water,cream and salt.
Stir very fast or your sauce will be too dark and bitter.
immediately pour into a bowl.It can be reheated in the microwave.
When pudding is done, pour warm sauce over pudding.Serve
